12 1ozslices American cheese
2cupsiceberg lettucethinly shredded
½cupdill picklesthinly sliced
½cupwhite oniondiced
2tbspwhite sesame seeds
Instructions
Make the sauce. To a medium bowl, add the mayo and collagen and whisk until the collagen is dissolved and no lumps remain. Add the remaining ingredients and mix to combine. Taste and adjust salt or other seasonings as desired.
Brown the meat. To a large skillet over medium high heat, add the meat in large chunks and press down into the pan. Leave the meat alone to develop a nice crust. Once the meat easily comes off the bottom of the pan and has good caramelization, flip and repeat. Once both sides are caramelized, turn the heat to medium low, season with salt and break the meat apart into small pieces. Once fully cooked, turn off the heat and set aside.
Cook the fries. Prepare the fries according to package instructions. I like to use an air fryer for extra crispiness, but ovens work great too and you can cook more at once that way. Preheat the oven to 400°F for assembly.
Assemble and serve. To a large sheet pan, add the crispy cooked fries and arrange so they’re evenly spread. Sprinkle the ground meat all over the fries, then lay the slices of American cheese evenly over top. Put in the oven for about 5 minutes, or until the cheese is fully melted and the meat is warmed through. Remove from the oven, then top with the shredded lettuce, dill pickle slices and diced onion. Drizzle the sauce evenly over the top, then sprinkle with the sesame seeds and serve immediately!

I recommend making extra sauce – you’ll want it for dipping! 😉
