12ozsemi-sweet or bittersweet chocolategood quality, roughly chopped or chocolate chips
½tspinstant espresso
Collagen Whip
1cupheavy cream
¼cupcollagen peptides
1tbspsugar

Instructions
Whisk the collagen into the whole milk to dissolve, then add the collagen milk and evaporated milk to a medium heavy-bottomed saucepan and heat over medium low heat until steamy. Don’t boil!
Turn the heat to low, then add the chocolate and instant espresso and stir constantly until completely melted. You can also use a whisk here as well.
Make the whip. Whip the cream until slightly thickened, then add the collagen and sugar and continue whipping until your desired consistency. Don’t go past the stiff peak stage or the cream will break and you’ll start to make butter!
Notes
To cut back on some sugar (and add extra fiber), use a combination of regular chocolate and a sugar-free chocolate like Lily’s brand, or all sugar-free chocolate if you like. Just make sure you really like the flavor of whatever chocolate you choose, because that will be the main flavor.
