Ingredients
  

Bolognese

  • 1 lb beef
  • 1 lb sausage
  • 2 tbsp EVOO
  • 1 cup Pepper
  • 1 cup Celery
  • 1 cup Carrot
  • 1 cup Onion
  • 5 cloves Garlic
  • 1 cup Red wine
  • 1 cup Whole milk
  • 1/4 cup Tomato paste
  • 28 oz San Marzano tomatoes blended
  • 2 Bay leaves
  • 1/2 tsp Red pepper flake or to taste
  • Salt + Pepper

Cream Sauce

  • 1 cup Half and half
  • 2 cup Cottage cheese
  • 1 cup Cream cheese
  • 1/4 tsp Cayenne
  • 1/4 tsp Nutmeg
  • 1 Egg

  • 1 lb spaghetti 3/4 cooked
  • 6 tbsp butter
  • 1 1/2 cups Parmesan freshly grated
  • 8 oz Mozzarella

Instructions
 

  • Roughly chop the onions, bell peppers, celery, and carrots. Put them all in a food processor and blend until everything is ground into small pieces. Scrape the bowl of the food processor and blend once more just to make sure everything is uniform.
  • Heat up a large pan and add the olive oil. Add the ground beef and sausage and season with salt. Once the meat is browned, remove from the pan and set aside in a bowl.
  • Using the same pan you browned the meat in, add a bit more olive oil and then add in your minced veggies. Season with a bit of salt and, as this cooks in the pan, make sure to scrape the fond (the delicious brown bits on the bottom of the pan) so that it gets mixed in. This adds flavor!
  • Once everything is fragrant and softened, add just a bit more olive oil, minced garlic, red pepper flakes. Stir this into your mixture to cook the garlic a little and then add in your tomato paste. Stirring again to incorporate the paste.
  • Add the cooked meat back into the skillet and stir to combine everything. Once it’s all mixed together, add the red wine and stir again. The red wine hitting the hot pan will pick up more of that fond that’s accumulated, which is exactly what you want!
  • Add the milk to the pan, stirring it all together again. Then add your blended San Marzano tomatoes. Any brand will work here, but San Marzano is the best! Now mix it all together and do a taste test. At this point you can add a little more salt or pepper, if you’d like.
  • Tuck the 2 bay leaves into your bolognese. If you don’t have bay leaves or don’t care for them, you can leave these out, but they really do add a little extra something! Stir everything together and let simmer on low, stirring occasionally, while you prepare the rest of the dish.
  • Start cooking your pasta. Meanwhile, blend half and half, cottage cheese, and the egg in a blender until smooth.
  • Reserve some pasta water and drain the cooked spaghetti. Add cream cheese, cottage cheese mixture, nutmeg, cayenne, parmesan, and some of the pasta water, and mix until cream cheese is melted and creamy. Add some more pasta water as needed, looking for somewhat soupy consistency as it will tighten up in the oven.
  • In a buttered 13×9 baking dish, layer half creamy pasta, then half bolognese, then the other half of the creamy pasta, and other half of the bolognese. Then top with mozzarella and parm, and bake at 350 F for 25 minutes. Then turn the oven to low broil and cook another 5 minutes. Let rest for 10-15 minutes before eating and enjoy!
